            Ready to cook with easy curry recipes? First, to make parathas you need to place flours, salt, ghee, and garlic in a food processor. Process until well combined. Then add ½ cup cold water and process until mixture comes together to form a soft dough. Turn onto a lightly floured surface and knead for 10 minutes or until elastic. After that wrap in plastic and refrigerate for 30 minutes. Finish with your parathas, heat oil in a large heavy-based saucepan over medium-high heat. Add onion and stirring for 3 to 4 minutes until the onion has softened. Add curry paste and stirring for one minute or until fragrant. Add pumpkin, potato, cauliflower, yogurt, and ½ cup of water. Bring to the boil and reduce heat to low. Simmer, covered, stirring occasionally for 20 minutes or until vegetables are tender. You can add more water if necessary. Meanwhile divide the dough of your parathas into 4 equal portions. On lightly floured surface, roll each portion out to a 20 cm round. Heat 2 tsp oil in a medium frying pan over medium-high heat. Cook dough for one minute each side until golden brown. Transfer a large plate. Cover to keep it warm and repeat with remaining oil and dough rounds. Top the curry with coriander and you can serve it with parathas.
